ITALIAN STYLE OVEN FRIED CHICKEN 
1 1/2 c. dry bread crumbs
3/4 c. grated Parmesan cheese
1/4 c. chopped parsley
1 clove garlic, minced
2 tsp. salt
1/4 tsp. pepper
1 c. butter, melted
1 (3 lb.) broiler-fryer, cut up

Combine crumbs, cheese, parsley, minced garlic, salt and pepper. Dip pieces of chicken in melted butter and roll in crumb mixture. Arrange in a shallow pan without overlapping the pieces. Drizzle with remaining melted butter and crumbs. Bake in a moderately hot oven (375 degrees) for an hour.
