NO-KNEAD REFRIGERATOR ROLLS | |
1 pkg. dry yeast 1/4 c. sugar 3 1/4 - 3 1/2 c. flour, sifted (I use 4 c.) 1 egg 1 c. warm water 1 tsp. salt 1/8 c. or more shortening In warm mixing bowl, dissolve yeast in water. Add sugar, salt and half of the flour. Beat thoroughly 2 minutes. Add egg and shortening. Beat in rest of flour gradually until you have a smooth dough. Cover with a damp cloth and place in refrigerator. Punch dough down occasionally as it rises. About 2 hours before baking, cut off amount needed and return rest of dough to refrigerator. Shape while cold into rolls and place on greased baking sheet. Let rise until light, 1 1/2 to 2 hours. Preheat oven to 400 degrees. Bake 12 to 15 minutes. Makes 2 dozen medium size rolls. |
