LO-CAL SWEET AND SOUR CHICKEN | |
1/3 c. unsweetened apple juice 2 dried apricots, diced 1 clove garlic, chopped 2 slices onion 1 bay leaf 1 tbsp. white vinegar 1/2 tsp. grated ginger 1/8 tsp. pepper 12 oz. boned, skinned chicken breast In sealable plastic bag, combine all ingredients. Seal. Allow to marinate several hours in refrigerator. Preheat oven to 350 degrees. Transfer chicken with marinade to baking dish. Bake, uncovered, 35 minutes. Serves 4. |
