TRUE SPONGE CAKE 
5 lg. eggs
1 c. sugar
1 c. flour
1 tbsp. lemon juice
1 tbsp. lemon zest
1/4 tsp. salt

In large bowl, beat egg whites until soft peaks form. Add sugar gradually; set aside. Without washing beaters, beat egg yolks until frothy. Add lemon juice and zest. Add flour and salt. Fold yolk mixture into whites gently until blended. Spoon into 9 inch tube pan. Bake at 350 degrees for 45 minutes. Invert pan immediately.
