PINEAPPLE UPSIDE - DOWN CAKE 
1/4 c. butter
1 c. brown sugar
8 slices canned pineapple
8 maraschino cherries
3 eggs
1/2 tsp. salt
1 1/2 c. sugar
1 1/2 c. flour
1 1/2 tsp. baking powder
3/4 c. scalded milk
2 tbsp. butter
1 tsp. vanilla

Melt butter in skillet, spread brown sugar over butter. Place 1 pineapple slice in middle and arrange other around it. Use cherry in each center.

Beat eggs and salt. Add sugar gradually and beat well. Stir flour and baking powder together and add to egg mixture gradually. Scald milk and add butter (2 tablespoons). Add this hot mixture all at once to the batter and stir until blended. Add vanilla and stir. Pour over pineapple. Bake at 350 degrees for 45 minutes.
