PINEAPPLE UPSIDE DOWN CAKE 
1/4 c. butter
3/4 c. sugar
1 egg
1 tsp. vanilla
1/4 tsp. salt
1 1/2 c. flour
1/2 c. milk

MIXTURE FOR BOTTOM OF PAN:

1 c. brown sugar
1 can sliced pineapple (5 slices)
1/4 c. butter (melted)
5 maraschino cherries

Cream butter and sugar. Add egg and vanilla. Beat well. Sift together salt, flour and baking soda. Add alternately with milk. Spread melted butter in bottom of 9 inch cake pan. Add brown sugar. Drain pineapple and place slices on top of brown sugar. In center of each slice place a cherry. Cover this with batter. Bake at 350 degrees for 45 minutes. Remove cake from pan immediately after taking out of oven.
