FRENCH APPLE COBBLER 
FILLING:

5 c. peeled or sliced tart apples
3/4 c. sugar
2 tbsp. flour
1/2 tsp. cinnamon
1/4 tsp. salt
1 tsp. vanilla
1 tbsp. butter

Preheat oven to 375 degrees. Make filling in medium bowl. Combine apples, sugar, flour, cinnamon, salt, and vanilla and 1/4 cup water. Turn into a 9x9x1 3/4-inch baking pan. Dot apples with butter.

BATTER:

1/2 c. sifted flour
1/2 c. sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 tsp. soft butter
1 egg, slightly beaten

Make batter in medium bowl. Combine all batter ingredients. Beat with wooden spoon until smooth. Drop batter in several portions on apples, spacing evenly. Batter will spread during baking. Bake 35-40 minutes or until apples are tender and crust is golden brown. Serve with light or whipped cream.
