ROAST FILET OF BEEF WITH ONION
BUTTER
 
1 beef fillet
Several garlic cloves
Salad oil

ONION BUTTER:

1/2 c. sliced green onion
1/2 c. butter
1/2 c. dry white wine
1/8 tsp. garlic salt

Insert garlic cloves into meat at various locations. Brush with salad oil and roast at 450 degrees about 45 minutes or until meat thermometer registers 140 degrees.

For onion butter melt butter in saucepan. Add green onion and quickly saute for 1 minute. Add white wine and garlic salt, heat through and serve immediately. Don't over cook onion or it will lose its nice green color. Serve with Barley Casserole (recipe in vegetable section).
