SUSAN'S SPECIAL MACARONI AND
CHEESE
 
1 (8 oz.) pkg. macaroni
1/4 c. butter
1/4 c. flour
2 c. half & half or heavy cream
1/2 tsp. salt
1/2 tsp. pepper
2 c. grated Cheddar cheese
4 oz. Velveeta cheese, cubed
Season salt

Cook macaroni according to package directions, omitting salt. Drain well and set aside. Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add half & half. Continue cooking and stirring until mixture is thickened and bubbly. Stir in salt and cheeses, stirring until cheese is melted and mixture is smooth and creamy. Stir macaroni into cheese sauce; pour into lightly greased baking dish. Sprinkle with season salt. Bake at 350 degrees for 30 minutes. Yield: 4-6 servings.

I took this a step further. I doubled it. Didn't measure a thing. Added 3 beaten eggs to the butter, cubes of Velveeta (8 oz.), a can of diced Ortega chile's (4 oz.). Used tones 6 pepper blend, jalapeno salt to taste. Heavy cream instead of half and half, a few huge dollops of sour cream. Crushed tortilla chips in a bad and a rolling pin. A few handfuls of shredded cheddar. Baked and it was delish. I make larger batches and feed the homeless. No one gives them things like this but me! Kick it up a notch!
