RICE WITH CHILI PEPPERS AND
CHEESE
 
1 c. rice
12 oz. sour cream
3/4 lb. grated cheddar cheese
1 (4 oz.) can chopped green chilies
Salt & pepper to taste
1/2 c. grated cheese for top

Cook rice until tender, do not over cook. Combine rice, sour cream, cheese and chopped green chilies. Season to taste with salt and pepper. Pour into greased 2 quart casserole dish. Bake, uncovered for 30 minutes in a 350 degree oven. Remove from oven and sprinkle 1/2 cup grated cheese on top and return to oven to melt.
