Give them a try today! 3 eggs (at room temp.) 3/4 cup sugar 2-3 tsp. pure vanilla 2 tsp. anise extract or 1 tbsp. anisette 3/4 cup (1 1/2 sticks) butter, melted 1 1/2 cups all-purpose flour 1 tsp. baking powder 2 tbsp. aniseed (optional) Beat together eggs and sugar for several minutes. Next, add in the vanilla and anise extract or anisette, as well as the melted butter. Mix until well combined. Then, sift together the flour and baking powder, and gradually stir it into the wet ingredients until a smooth batter forms. If desired, mix in the aniseed at this point as well. Preheat your pizzelle iron and grease it lightly with cooking spray or oil. Once hot, use a small scoop or spoon to drop the batter onto the iron, making sure not to overfill it. Close the iron and cook for about 2 minutes, or until the pizzelles are golden brown and crisp. Using tongs or a spatula, carefully remove the pizzelles from the iron and transfer them to a wire rack to cool. Repeat with the remaining batter, greasing the iron as needed between batches. Serve the cooled pizzelles as is, or dusted with powdered sugar for a classic touch. Enjoy! |
