ZUCCHINI BREAD 
3 eggs, beaten until light and fluffy
1 c. oil
2 c. sugar
3 c. sifted flour
1 tsp. each salt and soda
1/4 tsp. baking powder
2 1/2 tsp. cinnamon
2 c. grated squash
2 tsp. vanilla
3/4 c. each nuts, raisins and coconut

Beat eggs. Add oil and sugar; mix. Add flour, salt, soda, baking powder and cinnamon; mix. Add grated squash and vanilla; mix well. Add nuts, raisins and coconut. Bake in 2 greased and floured loaf pans. Bake at 325 degrees for 1 hour and 15 minutes.
