ZUCCHINI BREAD 
3 eggs, lightly beaten
1 c. cooking oil
1 c. sugar
2 c. zucchini, grated, squeezes & tightly packed
2 tsp. vanilla
3 1/4 c. all purpose flour
1 tsp. baking powder
1 tsp. baking soda
3 tsp. cinnamon
1 tsp. salt
3/4 c. raisins
1 c. nuts, chopped

Mix eggs, oil, sugar, zucchini and vanilla together. Sift together dry ingredients; combine with zucchini mixture. Add raisins and nuts. Bake at 350 degrees for 1 hour; cool 10 minutes. Remove from pan. Individual loaves make welcome gifts. You may substitute 1/2 cup coarse bran for 1/2 cup of the flour. Makes 2 loaves.
