ZUCCHINI BREAD 
3 eggs, lightly beaten
1 c. salad oil
1 c. sugar
2 c. zucchini, grated & drained
2 tsp. vanilla
3 1/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
3 tsp. cinnamon
1 tsp. salt
1 c. nuts, chopped
1/2 c. raisins

Mix first 5 ingredients. Sift together dry ingredients. Combine with zucchini mixture. Add nuts and raisins. Bake at 350 degrees for 1 hour. Cool in pan 10 minutes. Remove from pan. Makes 2 loaves.
