SALMON STEAKS 
4 salmon steaks, 1 inch thick
1/4 c. oil
1/4 c. white wine
1 tsp. shredded lime peel
2 tbsp. lime juice
1 tbsp. drained capers
2 cloves garlic, minced

Combine oil, wine, lime peel and juice, capers, and garlic. Pour over salmon steaks and marinate 6 hours. Drain salmon, reserving marinade. Pat excess moisture with paper towels and grill on uncovered grill over medium hot coals for 7 minutes - turn and grill 6-8 minutes until salmon flakes - brush with marinade.
