NASHVILLE HOUSE FRIED BISCUITS 
2 2/3 pkg. dry yeast
1/2 c. warm water
4 c. milk
1/4 c. sugar
1/2 c. shortening
2 tbsp. salt
7-9 c. flour
Oil for deep frying

Dissolve yeast in warm water in large bowl. Add milk, sugar, shortening, salt, and enough flour to make stiff dough. Let rise, covered, until double in bulk. Knead on floured surface until smooth and elastic. Shape into biscuits. Deep fry in 350-365 degree oil until brown. Biscuits may be frozen individually and stored in plastic bags. Let thaw and rise; do not allow to rise too high. Oil should be slightly hotter than 350 degrees but if too hot, the biscuits will get soggy in center. Yields 7 dozen.
