CHEESY BROCCOLI CASSEROLE | |
1 1/2 lbs. fresh broccoli 2 slightly beaten eggs 3/4 c. cottage cheese 1/2 c. shredded cheddar cheese (2 oz.) 2 tbsp. finely chopped onion 1 tsp. Worcestershire sauce 1/4 tsp. salt 1/8 tsp. pepper 1/4 c. fine dry bread crumbs 1 tbsp. butter, melted Wash and trim broccoli; cut into spears. Cook broccoli, covered, in a small amount of unsalted boiling water, about 10 minutes, or until crisp tender; drain. Meanwhile in bowl combine beaten eggs, cottage cheese, cheddar cheese, onion, Worcestershire sauce, salt, and pepper. Arrange broccoli in shallow 1 1/2 quart baking dish. Spoon cheese mixture on top. Stir together bread crumbs and butter; sprinkle over cheese mixture. Bake, uncovered, at 350 degrees for 15-20 minutes or until heated through and egg mixture is set. Makes 6 servings. |
