MARINATED CAULIFLOWER 
1/2 c. wine vinegar
1/4 c. salad oil
1 clove garlic, minced
1 tsp. salt
1 small onion, thinly sliced
1 tbsp. pimiento strips
Dash pepper
Dash paprika
Sugar to taste (optional)
Small head cauliflower, cut into bite size pieces
2 tbsp. chopped green pepper
Sugar to taste

Combine vinegar, oil, garlic (optional), salt, pepper, paprika and sugar (if added) in jar, cover, and shake well.

In a bowl combine cauliflower and remaining ingredients. Pour marinade over vegetables. Cover and refrigerate overnight, stirring occasionally. Serve as a relish, appetizer or salad. Makes about 4 cups. Other vegetables may be added as desired.
