BROCCOLI CASSEROLE 
3-4 stalks fresh broccoli or 1 pkg. frozen
2" - 2 1/2" chunk Velveeta cheese
20-24 Ritz crackers
1/2 stick butter
Salt substitute to taste
Pepper to taste

Clean and cut fresh broccoli into bite size pieces. Microwave broccoli on high for 4 minutes with a small amount of water (I usually do 1 stalk at a time). Transfer cooked broccoli to a casserole dish, draining excess water. Season broccoli with salt substitute and pepper. Cut cheese into 1/2" cubes or thin slices. Place on broccoli. Finely crush crackers and sprinkle over cheese. Melt butter and pour over crackers. Bake, uncovered for 30 minutes at 300 degrees.

Since microwave ovens vary in power, you may need to adjust your cooking time.
