SOFT MINT CHOCOLATE CHIP COOKIES 
2 c. flour
1/4 tsp. salt
3/4 c. firmly packed brown sugar
1/2 c. sugar
1 tsp. vanilla
1 egg
1 pkg. mint chocolate chips
1 tsp. baking powder
1 c. butter, softened

Combine butter, sugars and vanilla. Beat at medium speed until creamy (3-5 minutes). Add egg; beat well. Gradually add flour, baking powder and salt.

Stir in mint chocolate chips bits (peanut butter bits can be used instead). Drop by teaspoonful on ungreased cookie sheet. Bake at 375 degrees for 7 to 9 minutes. Don't overbake.
