MINT CHOCOLATE WAFERS (CHRISTMAS COOKIE) | |
1 c. butter, softened 3/4 c. sugar 2 c. unsifted flour 1/2 c. cocoa powder 1/2 tsp. peppermint extract 10 oz. chocolate semi sweet pieces, melted 1/2 tsp. peppermint extract Mix butter and sugar until well blended. Add flour, cocoa and 1/2 teaspoon mint extract; mix well. Shape into a 9 x 3 inch log; wrap in plastic and chill 1 hour. Preheat oven to 350 degrees. Cut dough crosswise into 1/4 inch thick slices. Place 2 inches apart on ungreased baking sheet. Bake 10 minutes. Cool completely. Add remaining 1/2 teaspoon extract to 10 melted chocolate pieces. Dip cooled cookies halfway. Place on wax paper. Chill until set. Makes 3 1/2 dozen. |
