IRMA'S CHUCKWAGON STEW 
2 lbs. lean chuck, cut in 1/2" pieces
2 tbsp. Crisco oil
2 c. water
1 med. onion, chopped
1 garlic clove, minced
1 tbsp. salt
1 tsp. sugar
1/4 tsp. thyme
1 tsp. crushed cumino seeds
1 tsp. Worcestershire sauce

Brown cubed chuck in oil; add next 8 ingredients. Cover and simmer for 1 1/2 hours. Then add: 6 carrots, cut in 1" pieces 1/2 lb. sm. white (boiling) onions 3 Irish potatoes, peeled & quartered

Cover and simmer for 15 to 20 minutes. Then add 1 (1 lb.) can whole tomatoes or 1 pound fresh peeled tomatoes. If canned tomatoes are used, use juice as part of water. Cover and simmer 10 to 15 minutes. Thicken, if desired, with arrowroot. Delicious with green salad and large chunks of homemade bread. Serves 6.
