BRAN MUFFINS 
1 c. boiling water
3 c. whole bran cereal
1 c. plus 1 tbsp. butter
2 tsp. baking soda
1 tsp. salt
1 1/2 c. sugar (1/2 c. brown sugar may be substituted)
2 eggs
2 c. buttermilk
3 c. sifted flour

Pour 1 cup boiling water over 1 cup bran cereal, cool. Cream butter and sugar until light and fluffy. Add eggs and beat thoroughly. Add buttermilk and blend. Add cereal mixture and remaining cereal. Blend in sifted dry ingredients. Turn into greased or paper lined muffin pans, filling about 2/3 full. Bake at 400 degrees for 12 to 15 minutes.
