BRAN MUFFINS 
5 tsp. baking soda
3 c. whole wheat flour
2 c. sugar
4 eggs or 1 c. egg substitute
15 oz. box Raisin Bran cereal
1 qt. buttermilk
2 c. white flour
2 tsp. salt
1 c. oil

Dissolve soda in buttermilk. Mix together remaining dry ingredients. Add eggs, oil and buttermilk-soda mixture. Stir just until mixed. Batter can be refrigerated and kept covered for up to 6 weeks. Bake at 400 degrees for 18 to 20 minutes. Makes 4 dozen muffins.
