PIZZA DOUGH 
1 pkg. active dry yeast
3/4 c. plus 1 tbsp. lukewarm water
1 1/4 c. whole wheat flour
1 tbsp. olive oil
1/2 tsp. salt
3/4 c. unbleached flour

Mix yeast, 1/4 cup lukewarm water and 1/4 cup whole wheat flour in a large bowl. Let sit covered, in a warm place for 30 minutes. Add remaining lukewarm water and the oil and mix well. Add salt. Stir in remaining whole wheat flour and unbleached flour. Knead dough for 10 minutes, adding flour to prevent sticking.

Shape dough into a ball and put into a oiled bowl. Turn greased side up. Cover. Let rise 2 hours. Punch down. Let rise for 40 minutes. Let stand for 10 minutes before shaping.
