ZUCCHINI COOKIES 
3/4 c. brown sugar
1/2 c. shortening
1 egg
1/3 c. grated zucchini
1/2 c. oatmeal
1/2 c. wheat flakes
1/4 tsp. vanilla
1 c. sifted flour
1/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
1/4 c. chopped nuts

Preheat oven to 350 degrees. Cream shortening and sugar. Stir in eggs and vanilla. Mix well. Add zucchini. Sift flour, salt, baking powder and soda, cinnamon, ginger and nutmeg. Mix thoroughly into creamed mixture. Stir in oatmeal and wheat flakes. Add chopped nuts, stir. Drop by teaspoonfuls on greased cookie sheets. Bake 8 to 10 minutes.
