HUMMING BIRD CAKE 
3 c. plain flour
1 tsp. baking soda
1 tsp. cinnamon
3 eggs (beaten)
2 c. chopped pecans
2 c. chopped bananas
2 c. sugar
1 tsp. salt
1 1/2 tsp. vanilla flavoring
1 1/2 c. Crisco oil
1 sm. can crushed pineapple

Mix all dry ingredients, add all other ingredients. Mix well with fork or spoon; do not beat. Bake in greased and floured cake pan (tube pan) at 325 degrees for 1 hour 15 minutes. Completely cool in pan. Use cream cheese icing.

CREAM CHEESE ICING:

1 (8 oz.) cream cheese (softened)
1 stick butter (softened)
1 box 10X sugar
2 tsp. vanilla flavoring
1/2 to 1 c. chopped pecans (optional)
