HUMMING BIRD CAKE 
3 c. plain flour
2 c. sugar
1 tbsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 eggs, beaten
1 c. vegetable oil
1 1/2 tsp. vanilla
1 (8 oz.) can crushed pineapple, undrained
1 c. pecans, chopped
2 c. bananas, chopped

Combine flour, sugar, baking soda, salt and cinnamon in a large mixing bowl. Add eggs and oil stirring until dry ingredients are moist. Do not beat. Stir in vanilla, pineapple, pecans and bananas. Preheat oven to 350 degrees. Grease and flour three 9 inch round cake pans and bake 25 to 30 minutes or until done. Cool in pans 10 minutes.

FROSTING:

1 (8 oz.) cream cheese, softened
1 stick butter, softened
1 1/2 boxes powdered sugar
1 tsp. vanilla
1/2 c. chopped pecans

Cream cream cheese and butter together until smooth. Add vanilla. Mix in powdered sugar until creamy. Add pecans and spread on cool cake.
