3 c. all-purpose flour
2 c. sugar
1 1/2 tsp. vanilla
1 1/2 c. oil
2 c. mashed bananas
3 eggs
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3/4 c. walnuts or pecans
3/4 c. (8 oz.) crushed pineapple

Mix all ingredients together by hand. Bake in a greased and floured tube or Bundt pan at 300 degrees for 1 1/2 hours. Cake will crack slightly on top when done. Ice with a cream cheese frosting or none at all.

CREAM CHEESE FROSTING:

Cream 1 stick butter and 8 ounces of cream cheese. Add 1 pound confectioners' sugar and 1 teaspoon vanilla. Mix until smooth.
