TWICE BAKED POTATOES 
12 potatoes
4 tbsp. butter
1 tsp. salt
1/2 c. hot milk
1 c. cheddar cheese, grated
1 bunch green onions, diced

Peel and cube 12 potatoes. Put potatoes in pot covered with water and salt. Boil until tender. Mash potatoes with milk. Check with teacher to see if they are creamy enough. Add onion and cheese and mix well. Put potato mixture in pastry tube and flute onto cookie sheet. Place in moderate oven 350 degrees and bake 5-10 minutes, until hot and lightly browned. Leftover baked potatoes can be prepared this way.
