NORWEGIAN RICE PUDDING 
1/2 c. rice
3 c. milk
3 tbsp. cornstarch
1 tsp. almond flavoring
3 eggs, separated
1 c. sugar
1 tsp. vanilla
1/4 c. raisins (optional)

Cook rice in 1 1/4 cups water until tender. Mix sugar and cornstarch. Add to scalded milk. Combine with rice. Cook over low heat until it begins to thicken. Add beaten egg yolks and continue stirring until it thickens. Blend in flavoring and add raisins. Pour into a well buttered dish. Top with meringue made from egg whites and 3 tablespoons sugar or omit meringue and top with whipped cream. If using meringue, bake in 250 degree oven until golden brown.
