BANANA CAKE 
1/2 c. butter
1/2 c. sugar
3 eggs, unbeaten
1 c. mashed bananas
1 1/2 c. sifted cake flour (I don't sift)
1 tsp. lemon juice
1/2 c. buttermilk
1/4 tsp. baking soda
1 tsp. baking soda

Cream butter in mixing bowl. Gradually add sugar and add eggs, one at a time. Beat until light. Quickly mash bananas and mix lemon juice with them to keep from turning dark. Add to above mixture and beat hard. Sift soda, salt and flour several times and add alternately with buttermilk.

Bake in 2 aluminum cake pans 30-40 minutes at 325 to 350 degrees. Fill and cover with a caramel icing or use an already prepared icing from the store. Double for a 3-layer round cake.
