ONION PIE
1/2 c. butter
4 lg. yellow or white onions, sliced into rings
2 tbsp. flour
1/2 tsp. salt
1 c. crushed soda crackers
3 eggs
1 c. milk
1/2 c. Swiss cheese, grated

Mix 1/4 cup butter in a large frying pan. Add onion, separating into rings. Cook over low heat until gold and limp, not brown. Stir in flour and salt.

CRUST: Combine 1/4 cup melted butter with cracker crumbs. Press into an 8- inch pie pan. Put onions in crust. Spread grated cheese over onions.

Beat eggs well. Add milk and blend. Pour egg mixture over onions and cheese. Bake at 350 degrees for 35-40 minutes until golden brown. Cuts and serves well. Blends with any meat that goes with onions.
