PEANUT BRITTLE | |
2 c. sugar 1 c. light corn syrup 1 c. water 2 c. shelled, unroasted peanuts 1 tsp. salt 2 tbsp. butter 2 tsp. baking soda Combine sugar, syrup, and water in a large, heavy skillet. Cook slowly over medium heat, stirring constantly, until sugar is dissolved. Continue cooking until mixture reaches the softball state (240 degrees) or until small amount of mixture dropped into very cold water forms a softball. Add peanuts and salt; cook to the soft crack state (290 to 300 degrees) or until small amount of mixture dropped into very cold water separates into threads which are hard and brittle. Mixture will be golden brown. Watch mixture carefully to avoid burning. Remove from heat. Add butter and soda, stirring to blend; mixture will foam. Pour onto 2 large buttered baking sheets; while still warm, pull out to desired thinness. When cold, crack into pieces. Makes two pounds |
