CHRISTMAS FRUIT COOKIES 
1/2 c. butter
1 c. light brown sugar
2 eggs
1 tsp. vanilla
Pinch salt
1 c. unsifted all-purpose flour
2 c. chopped pecans
6 slices candied pineapple, chopped
1/2 lb. candied red cherries

Preheat oven to 300 degrees. In large bowl, with electric mixer at high speed, beat butter with sugar until fluffy. Add eggs and beat until light. Add vanilla and salt. At low speed beat in flour until well combined.

Grease and flour 9x13x2 inch pan. Drop batter on nuts that have been spread over bottom of greased pan. Press the candied pineapple and cherries into batter. Bake 30 to 40 minutes or until golden. Cut into squares while warm.
