FRESH COLD CHICKEN SALAD | |
1 chicken, boiled and stripped off bones 1/2 head Romaine lettuce 1/2 head iceberg lettuce 1 med. tomato (wedges) 3 carrots, sliced very thin and diagonal cut 2 stalks of celery, sliced very thin 2 green onions, chopped 1/2 c. broccoli flowerettes 1/4 c. green or black olives (well drained) 2 tbsp. sunflower seeds (or sesame) Use well washed lettuce. Pluck into large bite sized pieces. Prepare remaining vegetables, except sunflower seeds, toss together gently. Just before serving add your favorite dressing to taste. Toss again. Then add large bite sized pieces of cold chicken. Toss again. Adjust dressing to taste, add seeds. Toss gently. Serve immediately with garlic bread. |
