APPLE AND PORK CASSEROLE 
1/4 c. chopped onion
1 tbsp. shortening
1 (10-1/2 oz.) can chicken gravy
3 tbsp. brown sugar
1/4 tsp. ground cinnamon
3 c. cubed cooked pork
2 tart apples, peeled & chopped
Pkg. instant mashed potatoes (enough for 4 servings)
1/4 c. milk
Dash pepper
1 beaten egg
1/2 c. (2 oz.) shredded American cheese

In saucepan cook onion in shortening until tender. Stir in gravy, sugar, and cinnamon. Add pork and apples; mix well. Spoon mixture into a 8 x 1-1/2 inch round baking dish. Prepare potatoes according to package directions, except use 1/4 cup milk and dash pepper. Blend egg into potatoes. Spoon potatoes in 6 mounds atop pork mixture. Bake, uncovered, at 350 degrees for 25 minutes. Sprinkle with shredded cheese; return to oven until cheese melts, about 5 minutes longer. Makes 6 servings.
