1 1/2 c. water
1 to 2 c. raisins
1 c. unsweetened applesauce
2 eggs
1/3 c. Sugar Twin sweetener
3/4 c. cooking oil
1 tsp. baking soda
2 c. flour
2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
Nuts as desired

Preheat oven to 350 degrees. Cook raisins in water until water is almost evaporated. Add applesauce, egg, sweetener, oil and mix well. Fold in flour, soda, spices, and vanilla. Mix well, mixture will be thick. Pour into a greased tube pan and bake.
