EASY CHICKEN AND DUMPLINGS
My family loves it. My husband wants the dumplings and broth when he is sick. It also makes great leftovers.

6 to 8 chicken tenders, thawed and cut into bite-sized pieces
1 cup water
1 box chicken broth
1/2 small onion
1 celery stick (large)
Bisquick baking mix
milk
salt and pepper, to taste
garlic powder (optional)

In a large pot put water and chicken broth and turn on medium heat.

Mince onion and celery (depending on how much you like it you can use more or less - I use a electric chopper to mince). Add onion and celery to pot and cover. Turn to high heat.

Mix Bisquick mix - 1 cup of Bisquick and 1/2 cup milk (should be biscuit consistency). Let sit.

Note: It is important to let it sit - if you don't the dumplings will dissolve.

Once the broth is boiling add chicken. Add a dash of salt and pepper as to taste. (Garlic powder is also great to add at this time).

Sprinkle Bisquick on counter and pat out Bisquick mix to about a 1/4-inch thick and cut in squares or strips (bite-size). Turn heat down between medium and high. Once all are cut begin adding to pot. Stir gently. Let simmer for about 5 minutes. The broth will be thick. If the broth is to thin sprinkle in a little Bisquick mix and gently stir.
