ZUCCHINI RELISH 
12 c. ground zucchini
5 tbsp. salt

Combine. Soak for 2 hours. Pour OFF and drain thoroughly. Combine with following ingredients:

5 c. sugar
2 1/4 c. white vinegar
1/2 tsp. pepper
1 tsp. turmeric
4 med. chopped sweet peppers
2 tsp. celery seed
1 tsp. dry mustard
1 tsp. nutmeg
2 tbsp. corn starch
4 c. diced onions

Bring to boil. Simmer uncovered 8 minutes, stirring occasionally. Pour into sterilized jars. Cook relish in boiling water bath 15 minutes. Makes 8 to 10 pints.

The best zucchini relish ever! I have been making this for a few years now, following the recipe exact and will eat it out of the jar like jam. My daughter wants it every year too. It can be eaten with every meat or meal. A must to make if you have lots of zucchini.
