12 c. ground zucchini 5 tbsp. salt Combine. Soak for 2 hours. Pour OFF and drain thoroughly. Combine with following ingredients: 5 c. sugar 2 1/4 c. white vinegar 1/2 tsp. pepper 1 tsp. turmeric 4 med. chopped sweet peppers 2 tsp. celery seed 1 tsp. dry mustard 1 tsp. nutmeg 2 tbsp. corn starch 4 c. diced onions Bring to boil. Simmer uncovered 8 minutes, stirring occasionally. Pour into sterilized jars. Cook relish in boiling water bath 15 minutes. Makes 8 to 10 pints. |
