SWEET ZUCCHINI RELISH 
6 lg. zucchini
1 green pepper
1 sweet red pepper
4 lg. onions
1/2 c. salt
Ice water
3 c. sugar
2 1/2 c. vinegar
1 c. water
2 tsp. turmeric
2 tsp. celery seed

Grind squash, peppers and onions. Mix salt with enough ice water to cover ground vegetables. Let stand 1 hour; drain. Rinse well and drain thoroughly.

In a saucepan, combine sugar, vinegar, water, turmeric and celery seed. Add ground vegetables and simmer on low heat 10-15 minutes. Spoon while hot into jars and adjust lids. Process in a boiling water bath 10 minutes.
