SWEET ZUCCHINI RELISH 
10 c. ground zucchini
4 c. ground onions
5 tbsp. salt
1 red pepper, chopped
1 green pepper, chopped
4 c. vinegar (cider)
2 tbsp. mustard powder
1/2 tsp. turmeric
1 tbsp. celery seed
4 c. sugar

Combine zucchini, onions and salt. Cover with water. Let stand overnight. Drain and rinse well. Add peppers, red and green.

Combine vinegar, mustard, turmeric, celery seed and sugar. Pour over zucchini mixture in large pot. Bring to boil. Continue boiling for 30 minutes. Pack in hot sterilized jars.

EXCELLENT recipe - I made last year and revised just a little this year - We felt it needed more peppers, so I added extra green and red peppers (1 lg. each) The recipe does not give what it yields - I have consistently come up with 14 half pints (8 oz.) This recipe does not call for a hot water bath, but I take that extra step. I might add. This is wonderful added to tuna or chicken salad!!! Also - 2 LARGE zucchini will give the 10 c. of ground zucchini you'll need - another good use for the big ones! I get requests for this every time I give it out...they want MORE next year.... Enjoy!
