CANDIED YAMS 
6 medium yams
3/4 c. sugar
1/4 c. water
1 tsp. vanilla
1/4 tsp. salt

Parboil yams 12 minutes. Peel and slice lengthwise and place in baking dish. Simmer sugar and water three minutes. Add vanilla; pour over yams to which salt has been added. Cook in oven (350 degrees) 20 or 30 minutes; baste several times.
