ZWIEBACKS 
2 c. milk, scalded
3/4 c. or 1 1/2 sticks butter
1 tbsp. salt
6 or 7 c. flour
1/2 c. warm water
2 tbsp. sugar
1 pkg. or 1 tbsp. yeast

Melt butter in milk, add salt and let cool to lukewarm. Dissolve sugar in water, sprinkle yeast over water and let bubble up.

Combine yeast and milk mixture in large mixing bowl. Add 4 cups flour and beat several minutes by hand or mixer. Gradually work in 2 more cups of flour. Knead in more flour a little at a time until dough is smooth and medium firm. Cover and let rise in warm place until double in bulk.

Shape 24 small buns on 2 greased cookie sheets by pinching off dough. Pinch another 24 slightly smaller the first ones. Let rise. Set smaller on top of larger ones. Bake at 400 degrees for about 15 minutes.
