PIE PASTRY MIX 
3 qts. (3 lbs.) all purpose flour
1 1/2 tbsp. salt
2 lbs. 1/4 oz. shortening
2 c. cold water

Mix flour, salt and shortening together and add the cold water. If needed, add a little more flour when mixing. Form a large ball of dough. Pinch off smaller balls of dough for each pie crust. Freeze balls of dough for future pies. Let dough soften enough to roll a crust. The dough may be frozen in small plastic freezer bags and will be good and fresh for several months.
