ARTICHOKES 
2 med. to lg. artichokes
1 tbsp. salt (opt.)
1 tbsp. oil
1 tbsp. vinegar

Fill a large pot (with lid) nearly full of water; bring to boil. Add salt, oil and vinegar. Drop washed artichokes into water; cook at medium boil, covered, for about 1 hour. When stem tested with a fork feels tender, remove artichokes, drain, cut off stem and stand artichokes upright. Serve with mayonnaise or melted butter. Pick up leaves by hand, dip in mayonnaise and pull through teeth. When leaves are eaten, fuzzy choke is removed with knife and fork and the bottom delectable section is eaten with a fork. Cooked artichokes are also delicious when eaten cold, served with mayonnaise.
