ARTICHOKE PICKLES | |
16 lbs. artichokes 1 gal. vinegar 5 lbs. sugar 3 lbs. sliced onions 1 red pepper pod 1 sm. box dry mustard 3 tbsp. turmeric 6 tbsp. salt Put artichokes in cold water and scrape skin. Dry thoroughly. Put in jars. Bring to a boil vinegar, sugar, salt, onions and pepper. After the vinegar mixture comes to a rolling boil take out the onions and put n top of the artichokes in the jars. Sprinkle the turmeric and mustard on top of the onions and pour boiling hot vinegar mixture into jars to top. Seal. Yield: 11 pints. |
