APPLE SCALLOP 
4 med. McIntosh apples, pared, & thinly sliced
1/2 c. water
Artificial sweetener = 8 tsp. sugar
1/2 tsp. vanilla
1/4-1/2 tsp. cinnamon
1 tsp. cornstarch dissolved in 1 tbsp. water
1/4 c. low calorie whipped cream

Combine apples, water, sweetener, vanilla and cinnamon in medium saucepan; bring to a boil, lower heat, simmer until apples are tender-crisp.

Lift out apples with a slotted spoon; set aside. Stir cornstarch mixture into liquid, cook until thickened. Gently stir in apples. Cool slightly and divide evenly in 4 dessert dishes.
