LEMON TREE CHICKEN 
This is a wonderful meal for any occasion. It can be cooked ahead and warmed when ready to serve.

2-3 lbs. boneless, skinned chicken breasts
1 tsp. salt
1/8 tsp. pepper
1/4 c. flour
1 tsp. lemon grind
1-2 tbsp. white wine
1/3 c. lemon juice
1/2 c. heavy cream
1 c. shredded Mozzarella

Dredge chicken in salt, pepper and flour on all sides. Melt butter in skillet and brown chicken breast for a few minutes on each side. Remove from pan. Add rind, lemon juice and wine to skillet, scraping up brown tidbits and bring to a boil. Return chicken to skillet. Cover and simmer for a few minutes until chicken is cooked. Put chicken into baking dish single layer. Stir cream into wine and lemon mixture and pour over chicken. Put Mozzarella on top and boil until bubbly and cheese is melted.
