BEEF & PEPPER RICE SKILLET 
1 1/2 lb. round steak (cut in strips)
2 tbsp. cooking oil
1 c. sliced onion
1 c. UNCLE BEN'S® converted rice
1 can beef broth
3 tbsp. soy sauce
2 green peppers, chopped
2 oz. jar sliced pimento

Brown beef strips in oil in 10 inch skillet. Stir in onion, rice, broth and 1 can of water. Add soy sauce. Bring to boil then reduce heat and cook on low, covered, until liquid is absorbed (25 minutes). Stir in peppers and pimento. Also good with mushrooms.
